Vinification
De-stemming and crushing; alcoholic fermentation with maceration with skin contact for at least 12 days, including frequent pumping-over and devatting.
Malolactic fermentation before aging in wood.
Aging
In French oak barriques and tonneaux of first and second passage for 18 to 24 months, assembled in 18 hl barrels. Further ageing in the bottle for a few months

Color
Ruby red tending to garnet
Aroma
Intense, ethereal, slightly oaky, it offers ripe fruit complemented by hints of spice. Tertiary aromas of vanilla, pipe tobacco, liquorice, cocoa, leather.
Taste
Dry, savoury, warm, rich in tannins that have been softened by ageing in barriques and tonneaux; remarkably persistent with a plum and cherry aftertaste

18 - 20 °C
Pairings
Important red meat dishes and roasts. Becomes a meditation wine with ageing.
